LOBSTER BERSERKO

Get 4 Lobster tails, thawed if frozen or live Lobster if it's available in your area and you want to deal with the mess. For the ease of clean-up and since I can't bear to kill the little guys, I use the tails from my grocer's Seafood department.



Preheat the grill to high.

Melt 1 stick (8 Tbs.) of salted butter in a saucepan.

Take the juices of 3 or 4 Lemons (or Limes if you wish) and add to the melted butter.

Add 1/4 cup of chopped basil.

Cut the tails in half lengthwise using kitchen scissors, remove the intestinal vein running down the tail.

Brush the cut side of the Lobster with the butter mixture and place on the grill, cut side down, and grill for 6 to 8 minutes. Using tongs turn and grill on the shell side until the meat is firm and white, all the time brushing with the remaining butter mixture.

Remove from grill and season with salt, pepper and more Lemon if desired.
